Cucumber Peach Salsa

Ingredients: 2 cups peaches, peeled and chopped 1 cup cucumber, chopped ½ cup red bell pepper, chopped 2 tablespoons lime juice ½ cup crumbled feta cheese 3 tablespoons chopped fresh mint Directions: In a medium bowl, combine peaches, cucumber, pepper, and lime juice.  Stir in feta and mint just before serving.

Garlic and Herb Butter

Orange Chocolate Fudge Dip

Ingredients: 6 Tbsp. nonfat vanilla yogurt 6 Tbsp. prepared chocolate fudge sauce 1-1/2 tsp. frozen orange juice concentrate, thawed 2 pints fresh strawberries Directions: Whisk ingredients together and refrigerate. Clean strawberries by rinsing and patting dry with a paper towel. Makes 6 servings.

Fruit Dip

Ingredients: 2 c. fat-free plain yogurt 1 small package of vanilla-flavored instant pudding 1/3 c. fat-free milk (approximately) Directions: Mix all ingredients, adding extra milk if necessary. Serve with any kind of cut up fruit.
