Parmesan Baked Tomatoes

Ingredients

  • 2 large tomatoes (beefsteak, Aunt Ruby, Cherokee)
  • 1/4 bunch oregano
  • 1/4 bunch basil
  • 2 cloves garlic
  • 1/3 cup parmesan
  • Olive oil
  • Black pepper

Directions

Wash and let tomatoes dry. Preheat oven to 350°. Slice tomatoes using a serrated knife, into 1/4-inch thick slices, lay individual slices next to each other on parchment or silpat. Sprinkle a very small amount of olive oil and fresh ground pepper on each tomato. Finely chop herbs and mix with cheese, sprinkle mixture over all tomatoes. Bake tomatoes in preheated oven at 350° for 5/8 minutes or until cheese has slightly browned and melted.
