Apple And Walnut Loaf



  • 1/2 margarine
  • 2/3 sugar
  • 2 eggs, beaten
  • 1 1/2 s millet flour
  • 3 teaspoons wheat-free baking powder
  • pinch of salt
  • 1 teaspoon pumpkin-pie spice
  • 1 Granny Smith apple, peeled, cored and chopped
  • 2/3 chopped walnuts


Preheat oven to 350°. Grease 9 x 5-inch loaf pan with margarine.
Place margarine and sugar in large bowl; cream until light and fluffy. Add eggs; mix well. Sift flour, baking powder, salt and pumpkin-pie spice twice; stir into batter. Add apple and walnuts. Mix well. Pour batter into greased pan.
Bake in preheated oven until wooden pick inserted into center comes out clean, about 1 hour. Let cool in pan 10 minutes. Remove from pan. Place on wire rack to cool.
