  • 1 1/4 s unsweetened applesauce
  • 1 egg
  • 2 tablespoons canola or corn oil
  • 1/4 honey
  • 1 whole-wheat flour
  • 1 all-purpose flour
  • 2 teaspoons baking powder
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/3 raisins


In large bowl, beat together applesauce, egg, oil and honey. Sift in dry ingredients; stirring just to moisten. Stir in raisins and divide batter among 12 muffin cups coated with nonstick cooking spray. Bake at 375° 20 minutes.

Applesauce makes these muffins tender and moist without overloading them with fat. Makes 12.
