Apricot Filled -Buckwheat Pancakes

  • 1 1/2 s dried apricots
  • 1/3 light brown sugar
  • 3/4 water
  • 4 Buckwheat Pancakes
  • 2 tablespoons honey (or syrup)


Preheat oven to 350°.
Soak apricots in bowl of cold water several hours. Drain. Place apricots in medium saucepan with brown sugar and water.
Cover; bring to boil. Simmer until soft, 20 to 30 minutes.
Lay pancakes on flat surface. Spoon apricot mixture onto one side of each pancake. Roll up loosely and arrange on baking tray. Warm honey; spoon it over pancakes to glaze. Bake in preheated oven until heated through, about 15 minutes.
