Asparagus Guacamole



  • 1 lb. asparagus
  • 1 clove garlic, minced
  • 2 tsp. lime juice
  • 1/4 cup canned, chopped green chilies
  • 1/2 tsp. salt
  • 1/2 tsp. ground cumin
  • 2 tbsp. onion chopped
  • 1/2 cup tomato, chopped and seeded


  1. Cook asparagus.
  2. Drain well and place in blender.
  3. Add all ingredients except onion and tomato.
  4. Blend until smooth.
  5. Stir in onion and tomato.
  6. Chill before serving with tortilla chips or as a vegetable dip.
  7. Serves 16.
