Ingredients

  • 6 rib eye steaks
  • 1 can or bottle of dark beer
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons brown sugar
  • 2 minced garlic cloves
  • 1/2 teaspoon fresh ground pepper
  • 1 medium vidalia onion sliced and separated into rings.
  • Directions

    Mix beer, vinegar, brown sugar, and minced garlic. Place steaks in baking dish and pour sauce over top, turn to coat and sprinkle with pepper. Allow to sit in refrigerator for one hour. While grill is heating (high heat) remove steaks from dish and pour marinade into small sauce-pan. Bring to boil, reduce heat and simmer. Put 1/4 cup of marinade into small skillet, add onion rings and simmer until marinade is reduced (this can be done on grill); move to cooler area of grill. Grill steaks for desired doneness. During last few minutes of grilling, baste steaks with boiled marinade to help lock in juices. Serve steaks with a generous helping of onions.
