Blueberry Oatmeal Muffins



  • 1 egg
  • 1/2 buttermilk
  • 1/2 brown sugar
  • 1/4 oil
  • 1 cup oatmeal, uncooked
  • 1/2 teaspoon cinnamon
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon soda
  • 1 1/2 blueberries, fresh or frozen, thawed and drained


Grease well both the holes and between the holes (the tops) of muffin tins to hold 9 muffins. Heat oven to 400°. Beat egg, stir in buttermilk, brown sugar and oil. Add oatmeal next, but do not stir in yet. Then add flour, cinnamon, baking powder, salt baking soda. Now stir into egg mixture just until flour is moistened. Batter should be lumpy. Fold in blueberries gently. Fill nine muffin cups. Bake at 400° for 15-18 minutes or until tops of muffins are nicely browned. (Peeled, chopped apples may replace blueberries)
