- 1 1/2 cups Martha White self-rising cornmeal
- 1 1/4 cups chopped broccoli (if frozen, thaw and drain)
- 1 large onion, chopped
- 1/2 cup shredded cheddar cheese
- 1 stick butter, melted
- 1/2 cup milk
- 4 eggs, beaten
- 6 ounces cottage cheese
- 3 tablespoons sugar
- 1 teaspoon salt
Directions
Preheat oven to 400°. Mix together ingredients, adding cornmeal last. Pour into greased 9 by 13 baking dish, and bake at 400° for 20-25 minutes or until golden brown. This is very moist and tender. It does not rise like regular cornbread. Serve in small squares.
