Broiled Lemon Chicken

Ingredients

  • 4 chicken leg quarters (legs with thighs)
  • 1 lemon, cut in half
  • 4 tablespoon melted butter
  • 1 large clove garlic, finely minced
  • 1/2 teaspoon dried leaf thyme
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon paprika
  • Directions

    Rub chicken leg quarters all over with lemon. Combine butter, garlic, thyme, salt, pepper, and paprika. Brush or spoon mixture onto skin side of chicken leg quarters. Place chicken on broiler rack, putting about 1/4 inch of water in bottom of pan to prevent fat from burning. Broil about 6 inches from heat for 10 minutes. Turn and brush with butter mixture. Broil for 10 minutes longer. Brush again with butter mixture and broil until tender and golden brown. Brush with more butter mixture before serving. Serves 4.
    Cook this lemon chicken under the broiler or on the grill.
