Verenike Casserole
This is a quick spin-off on the traditional Russian Mennonite dish verenike, or cheese pockets.
Ingredients
- 1 (24 oz.) container cottage cheese
- 3 eggs
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup sour cream
- 2 cups evaporated milk
- 2 cups cooked ham, cubed
- 7 to 9 dry lasagna noodles
Directions
Combine all ingredients except noodles. Place half of creamy ham mixture in bottom of cooker. Add uncooked noodles. Cover with remaining half of creamy ham sauce. Be sure noodles are fully submerged in sauce. Cover. Cook on low 5 to 6 hours.
