  • 2 s flour
  • 1 tablespoon sugar
  • 1 tablespoon baking powder
  • 1 teaspoon pepper
  • 1/2 teaspoon salt
  • 1 1/4 s milk
  • 1/4 vegetable oil
  • 1 egg
  • 1 (4 oz.) shredded sharp cheddar cheese, divided


Preheat oven to 400°. Generously grease or paper-line 12 (2 1/2 inch) muffin cups. Combine flour, sugar, baking powder, pepper and salt in large bowl. Combine milk, oil and egg in small bowl until blended. Stir into flour mixture just until moistened. Fold in 3/4 cup cheese. Spoon into muffin cups. Sprinkle with remaining cheese. Bake 15-20 minutes or until light golden brown. Cool in pan on wire rack 5 minutes. Remove from pan; serve warm. Makes 12.
