  • 1/4 cup chopped shallots
  • 1 garlic clove, minced
  • 1 teaspoon minced fresh thyme
  • 2 teaspoons olive oil
  • 2 1/2 cups cherry tomatoes, halved
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 oz. fresh mozzarella cheese, cut into 1/2-inch cubes
  • Directions

    In large skillet, sauté shallots, garlic and thyme in oil until tender. Add tomatoes, salt and pepper; heat through. Remove from heat; stir in cheese. Serves 4. Suggestion: Tossed this over pasta and eat it as a main dish.
