Chili Chicken


  • 4 chicken breasts, skinned
  • salt and coarse black pepper
  • 3 cups chili, homemade or 2 (15 oz.) cans chili
  • 1 cup shredded sharp Cheddar cheese


Preheat oven to 375°. Grease 13×9-inch glass baking dish. Season chicken with salt and pepper; lay in pan with meaty side up Pour chili over chicken, coating well. Cover with foil and bake in preheated oven 30 minutes. Remove foil and bake additional 30 minutes. Remove chicken from oven and sprinkle with cheese. Return to oven and bake until cheese melt
