Lemon Bars

This recipe for Lemon Bars was submitted by Esther Zimmerman, of Ashland, Ohio.

Ingredients

  • Crust:
  • 1 cup margarine
  • 2 1/2 cups flour
  • 1/2 cup sugar
  • Filling:
  • 4 eggs
  • 1 1/2 cups sugar
  • 1/3 cup flour
  • 1/2 teaspoon baking powder
  • 6 tablespoons lemon juice
  • 1/4 teaspoon salt
  • Powdered sugar

Directions

Mix together until crumbly. Pat into a 9 by 13-inch pan. Bake at 350° for 15 minutes or until brown on edges.Beat eggs then gradually add sugar, beating well. Blend in flour, baking powder, lemon juice and salt. Pour over baked crust. Bake for 18 minutes more or until set. Cool and sprinkle with powdered sugar.
