- 1 envelope unflavored gelatin
- 1/4 cup cold water
- 1 1/2 cups boiling tomato juice
- 2 teaspoons lemon juice
- 1/2 teaspoon salt
- 12 oz. can corned beef, crumbled
- 1/2 cup chopped celery
- 1/2 cup chopped cucumber
- 1 tablespoon chopped onion
- 1 cup mayonnaise
Soften gelatin in cold water; dissolve in tomato juice. Add lemon juice and salt; chill until partially set. Fold in remaining ingredients; pour into 8 ½ x 4 ½ x 2 ½-inch loaf pan. Chill until firm. Unmold; serve with deviled eggs. Makes 8 servings.
