Easy holiday eating: 30-minute chili

Hosting company for the holidays can go beyond simply having people over for dinner; if you have out of town relatives staying with you, you?ll be faced with the daunting task of not only planning the main holiday dinner but all of the meals in the days before and after the actual holiday. When you?ve got a 10-dish meal to worry about, the last thing you need to be stressing over is what to feed your company for lunch when they arrive or for dinner the next night. In these situations, one-pot meals are the way to go, and there?s no one-pot meal easier to make or more comforting than chili.

Chili is delicious for any cold-weather meal, but it?s especially nice to have on hand during the holidays. It?s the perfect meal for eating in the days leading up to or after a major get-together since it?s hearty enough to fill you up but healthy enough to give your body a break from all of that holiday gluttony.

This recipe for 30-Minute Chili is one of the best basic, easy chili recipes to keep up your sleeve for holiday entertaining this winter. It doesn?t call for any ?out there? ingredients, cooks up in just half an hour and can be easily doubled or tripled depending on the size of the crowd you need to feed. With the winning combination of tomatoes, chilies, onions and ground beef, it goes without saying that it?s absolutely delicious, too.

Feel free to substitute for ingredients with whatever you have on hand; if you don?t have ground beef, for instance, using ground or leftover turkey works perfectly fine. Make a big pot, lay out bowls of chili toppings like shredded cheese, sliced green onions and sour cream, and watch your guests happily stuff their faces.

Ingredients:

  • 1 pound ground chuck beef (80% lean)
  • 3/4 cup chopped yellow onion
  • 1 pkg (1.25 oz each) chili seasoning mix
  • 1 can (16 oz each) beans in chili seasoned sauce, undrained
  • 1 can (14.5 oz each) Hunt’s® Diced Tomatoes, undrained
  • 1 can (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, undrained
  • 1 can (8 oz each) Hunt’s® Tomato Sauce
  • 1 cup water

Directions:

Cook beef and onion in a large saucepan over medium-high heat for 5 minutes or until beef is crumbled and no longer pink, stirring occasionally; drain.

Stir in seasoning mix. Add remaining ingredients and bring to a boil. Reduce heat to medium; simmer 10 minutes, stirring several times. Top with shredded cheese, sour cream, onions or jalapeños, if desired.
