Fresh Summer Squash

Ingredients:

  • 2 yellow summer squash
  • 2 zucchini
  • 1 sweet red pepper
  • 1/3 cup diced onion
  • 3 tablespoons vegetable oil
  • 2 tablespoons cider vinegar
  • 1 tablespoon mayonnaise
  • 1 teaspoon sugar
  • 1/2 teaspoon dill weed
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon celery seed (powder or whole)
  • 1/4 teaspoon pepper

Directions:

  1. Thinly slice or julienne summer squash, zucchini and red pepper.
  2. Combine all ingredients and stir.
  3. Cover and refrigerate before serving to allow flavors to blend.
