Fried Catfish

Ingredients

  • For 4-6 servings:
  • 2 lbs. catfish, cleaned and dressed
  • 1 teaspoon salt
  • 1 cup buttermilk
  • 2 cups yellow cornmeal
  • 1 lb. shortening

Directions

Cut catfish into serving-size pieces. Sprinkle with salt; dip in buttermilk and dredge in cornmeal. Fry fish in hot shortening (360°) in heavy skillet over medium heat until golden brown, turning to brown both sides. Drain on paper towels. Remove to serving platter.
