  • 1 medium head of fresh cauliflower
  • 4 eggs, lightly beaten
  • 1 teaspoon parsley, chopped
  • 1 teaspoon garlic salt
  • dash pepper
  • 4 tablespoons vegetable oil
  • bread crumbs

Remove outer leaves and stalk of cauliflower and break into florets. Wash thoroughly. Steam or microwave (or cook in small amount of water) until tender, but still crisp; drain. In small bowl, combine eggs, parsley, garlic salt and pepper. Dip cauliflower pieces in egg mixture, then coat with bread crumbs. In large skillet, fry cauliflower in oil (in 2 or 3 batches) over medium heat until nicely browned. Drain on paper toweling and sprinkle with salt. Place on heat-proof platter in low oven and keep warm while frying remaining pieces. Add little more oil to skillet if necessary.
