Caramelized Creamed Corn
Ingredients
- 8 slices (8 oz) bacon
- 1 tablespoon butter
- 1/2 cup onions, thinly sliced
- 4 cups corn, fresh or frozen
- 1 cup sour cream
- 1/4 teaspoon cayenne or red pepper
- 1 tablespoon fresh basil, chopped
Directions
In large, nonstick skillet over medium heat, fry bacon until crisp. Remove to a cutting board, coarsely chop; set aside. Melt butter in large skillet; add bacon. Add onions and cook over medium-low heat, stirring occasionally until onions begin to brown and caramelize, about 10 minutes. Add corn, sour cream, pepper and basil; mix well. Cook over medium heat until bubbling. Serve immediately.
