Italian Zucchini Pie

Ingredients
- 4 cups zucchini, pealed, seeds removed and sliced
- 1 cup chopped onion
- 1/2 cup margarine
- 2 tablespoons parsley flakes
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon garlic powder
- 2 eggs, beaten
- 8 oz. mozzarella cheese
- 2 1/4 cups Bisquick
- 2/3 cup milk
- 2 teaspoons prepared mustard
Directions
In large skillet, melt margarine, cook zucchini and onion until tender. Stir in parsley, salt, pepper and garlic powder. In large bowl, blend eggs and cheese, stir into zucchini mixture, remove from heat. Mix Bisquick and milk; press dough into a 9-inch deep-dish pie pan. Spread mustard on dough. Pour zucchini mixture into pie pan. Bake 30 minutes at 375º.
