Roasted Vegetables

An amazing accompaniment to any dish or eaten on its own. This is an easy recipe to make except it takes some time since a lot of vegetables have to be peeled and chopped. This is one possible combination of vegetables, but anything goes so improvise.

Ingredients

  • 3 to 4 medium sized potatoes
  • 1 red pepper
  • 1 yellow or green pepper
  • 1 eggplant
  • 2 tomatoes
  • 2 zucchinis
  • 1 red onion or 2 small yellow onions
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 2 cloves garlic

Directions

Dice and chop vegetables; marinate in oil and lemon juice about 30 minutes. Put in roasting pan and cook at 350° about 1 1/2 hours. Every half hour take out and mix up. You can continue to add lemon juice and salt and pepper.
