1 pint cherry or roma tomatoes3 to 4 peaches1/2 white/yellow onion1/2 small red onion2 banana peppers1 yellow bell pepper1 green bell pepper1 clove garlic1/4 bunch cilantro (fresh)1 tablespoon red wine vinegarLime juice (fresh), to tasteSalt and pepper, to tasteWash all vegetables, let dry. Chop cherry tomatoes or roma tomatoes in to small bite size pieces, set in bowl. Slice peaches and chop into bite size pieces, add to tomatoes. Chop onions into small bite size pieces, add to tomatoes.
Slice and finely chop banana peppers, add to tomatoes and onions. Chop bell peppers into small bite size pieces, add to tomatoes and onions. Finely chop garlic clove and cilantro, add to vegetables. Squeeze fresh lime juice and add vinegar to bowl, toss. Taste salsa and season with salt and pepper as needed.
