Put all ingredients into blender. Cover and blend at high speed 1 minute, stopping to stir down once. Bake on greased griddle, using 1/4 cup batter for each pancake. Makes 20 (4-inch) pancakes. This is also excellent for waffles. Bake extra waffles and freeze. Reheat in toaster and they are as delicious as freshly made.
Note: People who don’t like cottage cheese will never know if they aren’t told that cottage cheese is in the cakes. I know because I could fool my nephews on this one. I found the recipe on an egg carton.
