Cheddar Cheese Ball

Ingredients

  • 1 (8 ounce) pkg. fat-free cream cheese, softened
  • 1 (8 ounce) cup fat-free cheddar cheese, shredded
  • 1 tablespoon chopped pimento
  • 1 teaspoon chopped green pepper
  • 1 tablespoon minced onion
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon lemon juice
  • Dash of red pepper
  • 4 ounce crushed fat-free saltine cracker crumbs

Directions

Combine all ingredients except cracker crumbs. Chill at least 1 hour. Shape into ball, and coat with cracker crumbs. Serve this cheese ball with whole-wheat crackers for an extra fiber boost.
