Chicken and Rice Skillet
Recipe adapted from University of Minnesota Extension Service.
Ingredients
- 1 cup any assortment of vegetables
- 1 teaspoon minced garlic
- 1/2 cup chopped onion
- 1/2 cup chopped cooked chicken
- 1/2 cup quick cooking brown rice
- 2/3 cup water
- 1 tablespoon low sodium soy sauce
- 1 tablespoon canola or olive oil
Directions
Heat oil in skillet over medium high heat. Add garlic, onion, and veggies. Stir fry until veggies are hot. Add cooked chicken pieces, rice and water, cover and simmer for 15 to 20 minutes until mixture is hot and rice is tender. Season with soy sauce.
