Ingredients

  • 1 cup cucumber, chopped with peel
  • 1 can (8 3/4 oz) corn, drained
  • 1 can (16 oz) stewed tomatoes
  • 2 tablespoons chopped red peppers
  • 2 tablespoons chopped green peppers
  • 2 tablespoons red wine vinegar
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon dried cilantro or coriander
  • 1/8 teaspoon black pepper
  • Directions

    Combine ingredients and mix well. Serve cold.
