Patricia Clark of North Royalton, Ohio, won first place in the Great American Spam Championship, adult category, at the 2010 Cuyahoga County Fair.
- 1 frozen pie crust, thawed
- 1 1/2 cups mini shell macaroni (3 cups cooked)
- 1/2 cup crumbled blue cheese (plus 1 teaspoon for garnish)
- 1 cup shredded parmesan cheese
- 1/3 cup sour cream
- 1 (12 oz) can Spam Classic, sliced thinly
- 1 tomato, sliced thinly
- 12-15 spinach leaves
- 1 egg white
Heat oven to 325°. Line a 6-inch springform pan with the thawed pie crust. Precook 10 minutes. Cook macaroni al dente and drain. In medium bowl, combine macaroni, blue cheese, parmesan cheese and sour cream. Mix until well blended. Place 1/3 of the macaroni in the pie crust. Using a spatula, press firmly. Place 1/3 of the sliced Spam in a layer on top of the macaroni. Place 1/3 of the sliced tomatoes on top of the Spam. Add another 1/3 of the macaroni on top and press firmly. Add another layer of Spam and then a layer of spinach leaves. Finish with the rest of the macaroni. Press firmly. Sprinkle bleu cheese on top. Brush top with egg white. Bake at 325° for 35-40 minutes.
