Oatmeal Rhubarb Cookies (or Bars)

Ingredients:

  • ½ cup butter, softened

  • ¾ cup brown sugar, firmly packed

  • ½ cup granulated sugar

  • 2 eggs

  • 1 teaspoon vanilla

  • 1 3/4 cups all purpose flour

  • 1 teaspoon baking soda

  • 1 teaspoon ground cinnamon

  • ½ teaspoon salt (optional)

  • 3 cups Quaker Oats, (quick or old-fashioned) uncooked

  • 3 cups rhubarb, finely chopped

Directions:

  1. In a large bowl, beat butter and sugars until creamy.
  2. Add eggs and vanilla.
  3. Beat well.
  4. In a separate bowl, combine flour, baking soda, cinnamon and salt.
  5. Mix well.
  6. Add oats and rhubarb.
  7. Drop onto a cookie sheet and bake at 375 degrees.


Variation:

Spread mixture on a greased 10-inch pie plate (or a 9 x 13 inch pan.) Bake at 375 degrees for ½ hour.
