  • 2 envelopes unflavored gelatin
  • 1/3 sugar
  • 1 1/2 s boiling water
  • 2 cups cranberry juice cocktail
  • 2 cups (1 pint) fresh or dry-pack frozen blueberries
  • 2 cups fresh peaches, peeled, sliced or 1 (16 oz.) can drained


In medium bowl, mix unflavored gelatin with sugar. Add boiling water and stir until gelatin is completely dissolved. Stir in cranberry juice. Chill, stirring occasionally, until mixture is consistency of unbeaten egg whites. Fold in blueberries and peaches. Turn into 7 1/2 cup mold or bowl. Chill until firm. (Molds well because of firm set.)
Note: Blueberries and homegrown fresh peaches are ripe at the same time at our farm.
