  • 2 cups all-purpose flour
  • 3/4 cup sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon plus 1 1/2 teaspoons ground cinnamon, divided
  • 1/4 teaspoon salt
  • 1 egg
  • 1 cup (8 ounces) reduced-fat plain yogurt
  • 1/4 cup canola oil
  • 1 teaspoon vanilla extract
  • 1/4 cup packed brown sugar


    1. In a large bowl, combine the flour, sugar, baking soda, 1/2 teaspoon cinnamon and salt.
    2. In a small bowl, whisk the egg, yogurt, oil and vanilla.
    3. Stir into dry ingredients just until moistened.
    4. In a small bowl, combine brown sugar and remaining cinnamon.
    5. Spoon a third of the batter into an 8-inch by 4-inch loaf pan coated with cooking spray.
    6. Top with a third of the brown sugar mixture.
    7. Repeat layers twice.
    8. Cut through batter with a knife to swirl the brown sugar mixture.
    9. Bake at 350° 45-55 minutes or until a toothpick inserted near the center comes out clean.
    10. Cool for 10 minutes before removing from pan to a wire rack.
    11. Yield: 1 loaf (12 slices).
