  • 1 cup fully cooked ham, cubed
  • 1 cup fresh mushrooms, sliced
  • 1/2 sweet red pepper, chopped
  • 1/4 green onions, sliced
  • 2 tablespoons butter
  • 8 eggs
  • 1/4 milk
  • 1/4 teaspoon salt
  • 1 cup shredded Cheddar cheese


In skillet, saute ham, mushrooms, pepper and onions in butter 6 minutes or until vegetables are tender. In bowl, combine eggs, milk and salt. Remove ham mixture from skillet; keep warm. In same skillet, add egg mixture; cook and stir until eggs are slightly set. Add ham mixture. Cook and stir until eggs are completely set. Sprinkle with cheese.
Tip: For easy variety, use bacon instead of ham; try different vegetables and cheeses.
