- 1 large head endive, washed and separated
- 5 slices bacon, fried, drained and crumbled, drippings reserved
- 1 onion, thinly sliced
- 1/4 bacon drippings
- 1/2 sugar (less if desired)
- 1 teaspoon salt
- 1/4 vinegar
- water, if needed to thin (optional)
Toss endive with bacon and onion slices. Combine bacon drippings, sugar, salt, vinegar and water, if desired; heat until mixture bubbles and sugar dissolves. Pour hot dressing over salad greens. Toss thoroughly so greens are wilted. Serve immediately.
