Wilted Endive Salad



  • 1 large head endive, washed and separated
  • 5 slices bacon, fried, drained and crumbled, drippings reserved
  • 1 onion, thinly sliced
  • 1/4 bacon drippings
  • 1/2 sugar (less if desired)
  • 1 teaspoon salt
  • 1/4 vinegar
  • water, if needed to thin (optional)


Toss endive with bacon and onion slices. Combine bacon drippings, sugar, salt, vinegar and water, if desired; heat until mixture bubbles and sugar dissolves. Pour hot dressing over salad greens. Toss thoroughly so greens are wilted. Serve immediately.
