Fresh Blueberry Ice Cream

Ingredients

  • 3 cups blueberries
  • 1 teaspoon lemon juice
  • 2 eggs
  • 1 1/2 s sugar
  • 2 cups half-and-half
  • 1/4 teaspoon almond extract
  • 1 cup whipping cream

Directions

In small bowl, combine crumbs and pecans. In blender or food processor, mix tofu, cream cheese, sugar and vanilla until smooth. In parfait glasses or dessert dishes, spoon 1 tablespoon crumbs in each glass. Top with tofu mixture and fruit. Repeat layers, ending with fruit. Cover and chill 2 to 4 hours.
Tip: Wine glasses can be used as dessert dishes for this recipe.
