Hot Dog Casserole

Ingredients:

  • 3 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 to 1 1/2 teaspoons salt
  • 1/4 to 1/2 teaspoon pepper
  • 1 1/2 cups 2 percent milk
  • 5 medium red potatoes, thinly sliced
  • 1 package (1 pound) hot dogs, halved lengthwise and cut into 1/2-inch slices
  • 1 medium onion, chopped
  • 1/3 cup shredded cheddar cheese

Directions:

  1. In a small saucepan, melt butter.
  2. Stir in the flour, salt and pepper until smooth.
  3. Gradually add milk.
  4. Bring to a boil; cook and stir for 2 minutes or until thickened and bubbly.
  5. In a greased 2 1/2-quart baking dish, layer with a third of the potatoes, half of the hot dogs and half of the onion.
  6. Repeat layers. Top with remaining potatoes.
  7. Pour white sauce over all.
  8. Cover and bake at 350° for 1 hour.
  9. Uncover; sprinkle with cheese.
  10. Bake 10-15 minutes longer or until potatoes are tender.
