Flourless Fudge Cookies

Ingredients:

  • 3 cups powdered sugar
  • 2/3 cup dark cocoa powder
  • 1/8 tsp. salt
  • 2 egg whites
  • 1 tbsp. vanilla extract
  • 1 1/2 cups chocolate chips, 60% cacao

  1. Preheat oven to 350 F. Line two baking sheets with silicone mats or parchment paper.
  2. Mix powdered sugar, cocoa powder and salt in a large bowl. Beat egg whites and vanilla into the sugar mixture until thick and batter-like; add chocolate chips and stir.
  3. Scoop batter by tablespoonful onto the prepared baking sheets.
  4. Bake in preheated oven until the tops are glossy and lightly cracked, 12 to 14 minutes.
  5. Let the cookies cool completely on the baking sheet and store in an airtight container for up to three days.
