- Cookie:
- 2 cups brown sugar
- 1 cup vegetable oil
- 1 1/2 cups pumpkin
- 2 eggs
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon ginger
- 3 cups all-purpose flour
- Cream Cheese Frosting:
- 1/2 cup butter, softened
- 8 ounce cream cheese, softened
- 1 teaspoon vanilla
- 3 3/4 cups powdered sugar
- Milk
Directions
Cookie: Beat the first 4 ingredients well. Add the rest. Drop by the teaspoon on hot waffle iron. Put frosting between 2 cookies and wrap in plastic. Cream Cheese Frosting: Combine butter, cream cheese and vanilla. Beat well. Gradually add powdered sugar. Add milk until desired consistency.
