Feta & Strawberries Crostini

Ingredients:

  • 16 slices baguette, ¼ inch thick
  • 1 tbsp. olive oil
  • 5 oz. feta cheese
  • 4 oz cream cheese
  • 16 strawberries
  • Pinch black pepper
  • 1 tbsp. honey
  • 1 – 2 tbsp. balsamic glaze
  • For garnish mint leaves

Directions:

  1. Slice baguette, brush lightly with olive oil and bake at 375 F for 7 to 8 minutes, turning over halfway through until golden brown. Cool completely.
  2. Mix feta cheese and cream cheese in a food processor until smooth.
  3. Spread on each of the crostini. Slice strawberries and arrange on top of whipped cheese mixture. Sprinkle lightly with black pepper, drizzle with honey and balsamic glaze. Garnish with mint, serve immediately.
