Slow Cooker Bacon Cheeseburger Dip
Ingredients:
- 1 lb. ground beef
- 1 cup red onion, diced
- 3 garlic cloves, minced
- 1/2 cup ketchup
- 1/4 cup stone ground mustard
- 4 Tbsp. dill relish
- 15 oz. can petite diced tomatoes, undrained
- 8 oz. cream cheese, diced into small chunks
- 8 oz. shredded sharp cheddar cheese
- 8 oz. shredded Colby Jack cheese
- 8-10 slices bacon, cooked and chopped
- For serving tortilla chips
Directions:
- In a large skillet over medium heat, brown the ground beef with the red onion and garlic. Cook until the meat is cooked through and the onion is translucent.
- Add in the ketchup, dijon mustard and relish. Stir well.
- Transfer the cooked mixture to your slow cooker. Stir in the diced tomatoes, cream cheese chunks, all of the sharp cheddar cheese, half of the Colby Jack cheese and the chopped bacon. Place the lid on the crockpot and cook on low for 2 to 3 hours, stirring every 20 to 30 minutes until everything is melted and well combined.
- Once fully heated and melted, sprinkle with the remaining Colby Jack cheese and replace the lid. Allow the cheese to melt, about 10 to 15 minutes, and then turn the slow cooker to warm and serve.
