Slow Cooker Apple Butter

Yield: 3 Pints

Ingredients:

  • 5 1/2 lbs. soft, sweet apples, Cored and chopped into small pieces, about ¼ inch
  • 1 cup brown sugar, firmly packed
  • ¾ cup granulated sugar
  • 1 tbsp. ground cinnamon
  • ¼ tsp. salt
  • ⅛ tsp. ground cloves
  • 1 ½ tsp. vanilla extract

Directions:

  1. Slice apples into small pieces and dispose of cores; no peeling necessary. Place apples in a large slow cooker.
  2. In a medium-sized bowl, stir together sugar, brown sugar, cinnamon, salt and cloves until well-combined. Pour sugar mixture over apple pieces and stir until well combined. Place the lid on the slow cooker and cook on low heat for 10 hours.
  3. Next, use an immersion blender to puree apples until smooth and no chunks remain. Add vanilla extract.
  4. Turn slow cooker to low heat and cook another 2 hours uncovered, stirring occasionally.
  5. Store in the refrigerator in an airtight container up to two weeks.
