Roasted Pork with Apples

Yield: 4 servings

Ingredients:

  • 2-3 lbs. pork tenderloin
  • To taste salt and pepper
  • 3 tbsp. oil
  • ½ cup brown sugar
  • 3 tbsp. Dijon mustard
  • 1 tbsp.minced garlic
  • 2 tbsp. apple juice
  • 2 medium apples, sliced into wedges

Directions:

  1. Preheat oven to 400 F. Season pork with salt and pepper on all sides.
  2. Drizzle oil into a large, oven-safe skillet and bring to medium heat on the stove.
  3. Stir together brown sugar, dijon mustard, garlic and apple juice. Rub mixture all over pork using your fingertips.
  4. Cook pork in preheated and oiled pan, turning every few minutes to ensure even cooking. After about 10 minutes, add apples.
  5. Transfer skillet to preheated oven and cook until tender and pork is white through the middle or about 15 minutes.
