Yield: About 40 balls
Ingredients:
- 1 cup creamy peanut butter
- ½ cup pure pumpkin puree
- 3 cups powdered sugar
- 1 tsp. vanilla extract
- 1 tbsp. pumpkin pie spice
- 12 oz. chocolate chips, semisweet, white or dark
- 1 tsp. coconut oil or vegetable shortening for smooth melting
Directions:
- In a large bowl, combine the creamy peanut butter, pumpkin puree, vanilla extract and pumpkin pie spice with a handheld or stand mixer until smooth. Gradually add the powdered sugar, 1 cup at a time and mix until a thick dough forms.
- Scoop about 1 tablespoon of dough at a time and roll into smooth balls with your hands. Place them on a baking sheet lined with parchment paper. Refrigerate the balls for 1 hour so they firm up.
- Melt the chocolate chips and coconut oil in the microwave in 30-second intervals, stirring in between until completely smooth.
- Insert a toothpick into the top of each chilled ball. Dip most of the ball into the melted chocolate, leaving a small circle of the pumpkin-peanut butter mixture exposed at the top.
- Place back on the parchment paper, remove the toothpick, and smooth over the small hole with your finger or a knife.
