- 1/2 cup black beans, cooked
- 1 cup frozen corn
- 1 medium onion
- 1 red bell pepper
- 5 cloves garlic
- 1/4 cup chopped, fresh cilantro
- 1 tablespoon olive oil
- 1 teaspoon water
- Juice of one lemon, one lime, one orange
Sauté pepper, garlic and onion for 3 minutes in olive oil and water. Mix other ingredients and sauté 1 minute with lid on. Pour into bowl and refrigerate for one hour.
