Yield: 8 Servings
Ingredients:
- 4 ½ lbs. beef round steak, bite-sized
- 1 lb. Boston butt or pork shoulder, bite-sized
- 3 lbs. potatoes
- 1½ pounds onion
- 4 garlic cloves
- ½ cup butter
- 4 tbsp. caraway seeds
- 3 tbsp. salt
- 2½ tbsp. sweet paprika
- 1 tbsp. tomato paste
- 3 tbsp. dried marjoram
- dried chili pepper or fresh
- 1 can beer
- 10 cups water
Directions:
- In a cauldron (or a large pot), melt the butter. Add diced onion and sauté for about 5 minutes.
- Now add the meats that have been diced into bite-size pieces. Let them brown while stirring occasionally.
- Add sweet paprika, mix and let it cook for about a minute before adding 4 cups water, ½ of diced potatoes, caraway seeds, salt and can of beer. Cover with a lid and let simmer.
- From time to time, check if there is enough water. If not, add more. Continue simmering. About 1½ hours into cooking, add the rest of the potatoes and more water. Bring to a boil and cook for about another hour, until the meat is soft.
- Fifteen minutes before it’s done, add minced garlic, tomato paste, marjoram and dried whole chili. Taste and season more if required.
