Campfire Stew
Yield: 8 Servings

Ingredients:

  • 4 ½ lbs. beef round steak, bite-sized
  • 1 lb. Boston butt or pork shoulder, bite-sized
  • 3 lbs. potatoes
  • 1½ pounds onion
  • 4 garlic cloves
  • ½ cup butter
  • 4 tbsp. caraway seeds
  • 3 tbsp. salt
  • 2½ tbsp. sweet paprika
  • 1 tbsp. tomato paste
  • 3 tbsp. dried marjoram
  • dried chili pepper or fresh
  • 1 can beer
  • 10 cups water

Directions:

  1. In a cauldron (or a large pot), melt the butter. Add diced onion and sauté for about 5 minutes.
  2. Now add the meats that have been diced into bite-size pieces. Let them brown while stirring occasionally.
  3. Add sweet paprika, mix and let it cook for about a minute before adding 4 cups water, ½ of diced potatoes, caraway seeds, salt and can of beer. Cover with a lid and let simmer.
  4. From time to time, check if there is enough water. If not, add more. Continue simmering. About 1½ hours into cooking, add the rest of the potatoes and more water. Bring to a boil and cook for about another hour, until the meat is soft.
  5. Fifteen minutes before it’s done, add minced garlic, tomato paste, marjoram and dried whole chili. Taste and season more if required.
