Crash Potatoes

Ingredients:

  • 12 whole new potatoes
  • 3 Tbsp. olive oil
  • To taste salt and pepper
  • Garlic powder, dash on each
  • To taste rosemary (or your favorite)
  • For topping, Parmesan, finely grated

Directions:

  1. Preheat the oven to 450 F.
  2. Bring a pot of salted water to a boil. Add potatoes and cook until tender.
  3. Drizzle a sheet pan with olive oil. Place potatoes on the sheet pan, leaving plenty of room between each potato. With a fork, gently press down each potato until it slightly mashes. Rotate the potato 90 degrees and mash again. Drizzle the tops of each crushed potato with more olive oil. Sprinkle potatoes with seasonings. Top each potato with grated Parmesan.
  4. Bake 20 to 25 minutes until golden brown and sizzling. Serve with ranch dressing or sour cream.
