Beat cheeses in small mixing bowl until light and fluffy. Stir in nuts, milk and nutmeg. Chill, covered, 3 to 4 hours to allow flavors to blend. Remove from refrigerator while preparing apples. Core un-peeled apples and cut into 1/2-inch thick slices. Dip in lemon juice to prevent darkening. Spread each slice with cheese mixture. Put back together to reshape half or whole apples. Serve with crackers on the side.
