  • 2/3 milk
  • 1/2 creamy peanut butter
  • 1 large egg
  • 2 cups buttermilk baking mix
  • 2 tablespoons sugar


About 25 minutes before serving or early in the day: Preheat oven to 400°. Grease twelve 2 1/2 inch by 1 1/4 inch muffin pan cups. In medium bowl, with spoon, mix milk, peanut butter and egg until smooth. Add baking mix and sugar. With spoon beat vigorously 30 seconds. Spoon batter into muffin pan cups. Bake 15 minutes or until lightly browned. Immediately remove muffins. Makes 12 muffins.
