White Chocolate with Raspberry Brownies

Ingredients:

  • 10 oz. white chocolate, chopped
  • 2/3 cup butter, cut into cubes
  • 1 cup sugar
  • 4 large eggs
  • 2 tsp. vanilla extract
  • 1 3/4 cup flour
  • 1/2 tsp. salt
  • 2 cups fresh raspberries
  • 1 1/2 cups white chocolate chips

Directions:

  1. Preheat oven to 350 F and line a 9-by-13-inch baking dish with parchment paper.
  2. Place the white chocolate and butter into the top part of a double boiler. Whisk until melted and completely smooth.
  3. Transfer the mixture into another large bowl and whisk in the sugar until combined and smooth.
  4. Whisk in eggs, one at a time, until each egg is incorporated. Mix in the vanilla extract.
  5. In a separate large bowl, whisk together the flour and salt until combined.
  6. Gradually whisk the dry ingredients into the wet until combined and smooth. Fold in half the raspberries and 1 cup white chocolate chips.
  7. Pour batter into the baking dish. Top remaining 1 cup of raspberries and 1/2 cup white chocolate chips onto the top of the batter.
  8. Bake in the oven for 20 minutes, or until the top is golden brown and a toothpick comes out clean.
  9. Cover the pan with foil before baking for an additional 5 minutes.
  10. Remove from oven and allow to cool completely before cutting into bars.
