White Chocolate with Raspberry Brownies
Ingredients:
- 10 oz. white chocolate, chopped
- 2/3 cup butter, cut into cubes
- 1 cup sugar
- 4 large eggs
- 2 tsp. vanilla extract
- 1 3/4 cup flour
- 1/2 tsp. salt
- 2 cups fresh raspberries
- 1 1/2 cups white chocolate chips
Directions:
- Preheat oven to 350 F and line a 9-by-13-inch baking dish with parchment paper.
- Place the white chocolate and butter into the top part of a double boiler. Whisk until melted and completely smooth.
- Transfer the mixture into another large bowl and whisk in the sugar until combined and smooth.
- Whisk in eggs, one at a time, until each egg is incorporated. Mix in the vanilla extract.
- In a separate large bowl, whisk together the flour and salt until combined.
- Gradually whisk the dry ingredients into the wet until combined and smooth. Fold in half the raspberries and 1 cup white chocolate chips.
- Pour batter into the baking dish. Top remaining 1 cup of raspberries and 1/2 cup white chocolate chips onto the top of the batter.
- Bake in the oven for 20 minutes, or until the top is golden brown and a toothpick comes out clean.
- Cover the pan with foil before baking for an additional 5 minutes.
- Remove from oven and allow to cool completely before cutting into bars.
